Sometimes it doesn’t have to be hard


Simple doesn’t have to lack flavour, freshness or interest. This is an example of me on the fly, sans time yet still desiring food with flavour.

1 ocean trout fillet
1 teaspoon smoked garlic salt (buy some or make some, it’s my new best friend)
Spinach from the garden
Congo potatoes (I have a massive love affair with these dark purple fleshed beauties what look a little bit like turds)

Grill the fish until skin crisps a little, steam the spinach, roast the potato crisps.
Done.
Serve.
Eat.
