This meal was borne out of the need to use up various items in the refridgerator before they went off. I hate to waste food so this is what we ended up with.
1 onion – chopped
1 green capsicum cut into thin rings
2 tomatoes – chopped
300g good marninara mix
1/2 cup of fish stock
1 handful of chopped coriander
1 sheet of corn wrap shredded into small squares
Put onion and capsicum in a lightly oiled frying pan and sautee until soft
Add fish stock, tomatoes and marinara and simmer until seafood is cooked through
Throw in coriander and shredded corn wrap at the end and stir through
Serve
I discovered the the shredded corn wrap has the texture of a flat pasta. This was healthy, easy and delicious.
