I was starving after a trip to the markets on Sunday afternoon and whipped up this tasty snack with one of the beautiful avocados I bought.
1 avocado – mashed with a fork
2 tablespoons coriander – finely chopped
1/2 spanish onion – finely diced
1/2 teaspoon cumin
1/2 teaspoon chili powder
squeeze of lime juice – not too much
Mix ingredients together and serve with corn chips. I prefer plain organic corn chips as they are much closer to the taste of corn chips in Mexico.
