I made this based on something I saw on the Macedonion edition of Food safari a while back. Quick and simple.
Sweet tomato paste
Anchovies (get good quality ones, not those hairy salty little things in the jar)
Chopped fresh basil
Parmesan or similar hard cheese
Olive oil
Bead of your choice (I used rye as I couldn’t get spelt)
Spread tomato paste on bread, coat with parmesan, top with anchovies, basil and olive oil and place under a hot grill until done. I’m a huge fan of anchovies. Will definitely be making this again.
