I love breakfast. There’s something really indulgent about leisurely weekend breakfasts and how they are the antithesis of that time of day during the week. Taking time to drink cups of well steeped tea whilst preparing and cooking fresh ingredients is one of my favourite parts of the week. Having said that convenience can also be a wonderful thing and this is a delicious and easy to make breakfast meal that leaves minimal washing up.
Eggs steamed on a bed of mushrooms and spinach
2 tablespoons balsamic vinegar
2 cloves of garlic
Enough spinach for two
10 medium button mushrooms – quartered
4 eggs
Put the mushrooms, balsamic and garlic (minced) into a plastic bag and shake until the mushrooms are coated.
Drizzle a little olive oil into a heavy based frying pan and sauté the mushrooms until soft.
Add spinach and sauté until it begins to wilt then crack four eggs over the top and cover with a lid so the liquid from the mushrooms and spinach steams the eggs.
Serve when eggs are done as you like. I like mine runny in the centre.
