Beans with glazed peacans and blue cheese, smokey paprika and parmesan potatoes and grilled salmon

Just before Christmas my department had a team building activity which, much to my delight, was a cooking class and dinner through Cheeky food group which was a hell of a lot of fun and we managed to make some pretty tasty food as well. I finally decided to get around to making a couple of the recipes myself which included the Asparagus & Beans with Glazed Pecans and Blue or Goats Cheese and the Baby Potatoes with Zesty Parmesan Butter. I served each of these with a simple piece of grilled salmon with smoked garlic salt. I can’t recommend the glazed pecans enough. I’m pretty sure we demolished enough of the beans with pecans to feed four people. Beans are good for you right?

Potatoes with Zesty Parmesan Butter

Note: I used sliced potatoes with skins on as that is what I had at home. I also cut down on the ingredients so I basically stuck with smoked paprika, butter, parmesan

1 kilo baby chat potatoes
1 tbsp salt
125gm butter
3 cloves garlic, finely crushed
1/4 cup Parmesan cheese, finely grated
1 tbsp fine lemon zest
2 finely chopped green onions
1 tbsp smoked paprika
½ cup of chopped basil and/or chopped parsley
Salt & freshly ground black pepper
Extra basil or parsley and green onions to garnish

Asparagus & Beans with Glazed Pecans and Blue or Goats Cheese

Spicy Glazed Pecans

1 tbsp butter
1/2 tbsp sugar
1/2 tsp salt
1/2 tsp fresh ground black pepper
1/8 tsp MasterFoods cayenne pepper
1 tbsp maple syrup
1 tsp water
1/2 cup pecans

Gently heat all ingredients in a heavy-bottomed frypan over low-medium heat. Stir constantly until the pecans are well coated and the sugar has begun to caramelise, about 5 minutes.  Spread the pecans on a baking sheet to cool completely.

Spread over the top of steamed or BBQ’d asparagus and/or beans the sprinkle with cheese.
