I’m dying to go to Spain and eat. Western Europe has never been high on my travel agenda but oh how I would love to just go to Spain and eat. I think this meal would make a Spaniard proud. The salad in particular is a Spanish salad I observed on a random cooking show I saw once that I can’t quite recall and variations of it are often on the menu.
It’s quite simple, boiled potato rounds, blanched asparagus, anchovies and a stack of finely chopped herbs (parsley, chives and mint in this instance) topped with some good olive oil. Sublime.
I served it with spatchcock stuffed with lemon and thyme and roasted with a sprinkle of smoked garlic salt.
If I can’t go there I can at least eat like I’m there.
