Zesty spelt fettucini with ocean trout and peas


This is quick and simple.

Serves 2.

1 reasonable handful of spelt fettucini
1 large piece of ocean trout cut into thin slivers
3/4 cup of peas – thawed
1/2 cup of freshy grated parmesan
1 small chopped chilli
1 tspn greated lemon zest
Juice of half a lemon
1 tbspn olive oil

Boil spelt pasta until al dente then drain and put back into pan with heat turned off. Quickly add ocean trout as it is merely the steam and heat from the pasta that will cook this lightly. Also put in lemon zest, parmesan, olive oil, lemon juice, chilli, peas and olive oil. Stir gently until well mixed and serve with extra parmesan and cracked pepper.
