1 diced yellow onion
1 tin of diced tomato
1/2 cup of stock
Curry mix from the Fijian spice market on King Street Newtown. (They have some seriously great spices)
This is too easy. Sauté onion in a large frying pan, add spice mix and fry for 1 minute then sear beef. Add in a tablespoon of tomato paste, chopped chilli, stock, tinned tomato and potato. Simmer with the lid on until the potato is done.
Finely chop ingredients and add to yogurt.
Add a pinch of saffron to your basmati rice for a great flavour and aroma.
Serve with pappadams.
