Lamb chops with baked eggplant and goats cheese stack


This is a bad photo sorry but I had to share as it was a delightfully naughty and absolutely delicious dish. Celebrity Chef Mediterranean pulled this one off and it was a treat to arrive home and be faced with such exquisite food.

The lamb chop was simply fried medium rare. It was a good quality lamb chop from a good butcher. I love the flavour of lamb on it’s own when it’s good quality and it went perfectly with the highly flavoured accompanying baked goods.

The eggplant was prepared by salting then washing and drying. It was then stacked with a thin slice of goats cheese in between each slice and baked in a sauce made from cream and tomato soup.

Seriously delicious.
