Sunday morning breakfast called for using up some leftover smoked salmon and corn wraps.
2 large slices of smoked salmon
1 handful of finely chopped fresh chives
5 beaten eggs
Small amount of crumbled danish feta
Salt and pepper to taste
TIP: I also add in about a tablespoon of soda water to the beaten eggs to make it light and fluffy.
