During our travels we ate dinner at the fantastic Casa Crespo on Oaxaca Mexico. Described as culinary theatre the degustation (only available through reservation) is kicked off by a demonstration of cooking a seafood broth in individual bowls with hot rocks, a traditional method of cooking to the indigenous of this area.
We chose to have the 9 course option (6 courses is available). Service, food, wine, presentation and ambience were all outstanding with waiters able to explain the ingredients of each dish in spanish as well as english. Our spanish was ok as far as eating went but with complex dishes including unusual local ingredients we were grateful for the translation.
Now I have the difficult task of recalling what all of these things were. Bear with me. Also please note there were a couple of courses I missed photographing.
Great photos! That food is so … something! … that it almost doesn’t look like food. Especially the first one. Are you sure you weren’t eating the table decorations? That would be embarrassing.
The first one is cactus… with stuff. I’m going to add descriptions, I just have to get my head together with the taller half and work out what they all were. 🙂

just a comment… the ones explaining the dishes… were not waiters! they were te actual chefs!
Well… we had one guy who was checking our drinks, taking our plates away and wasn’t able to tell us what was in a couple of the dishes and had to go and get the chef. For other dishes, yes, we had the chef explain it.
