Smoked salmon done two ways


I sourced some absolutely divine smoked salmon from Eveleigh Markets as well as some zucchini flowers and made zucchini flowers stuffed with smoked salmon and smoked salmon served on butter bean salad. This was really, really, really, REALLY good!

Smoked salmon stuffed zucchini flowers

Batter

1/2 cup flour (I used gluten free)
1/2 cup white wine
1/2 tsp baking powder
salt to taste

Mix ingredients and refrigerate for 1 hour

Stuffing

1/2 smoked salmon fillet
1/2 cup of sour cream
1 tbs chopped dill
1tbs lemon juice

Mix together well into a lovely pinkish paste.

6 large zucchini flowers – baby zucchini still attached

Check inside of flowers for bugs etc (do not wash as they will not fry well). Spoon mixture into the flowers, dip in batter and generously coat then fry in about 1/2 an inch of very hot vegetable oil. To check if oil is ready for frying drop in a tiny bit of batter and if it fizzles straight away it is ready. Don’t overcrowd the oil as it will bring down the temperature and the delicate flowers and the batter will soak up too much oil.

Butter bean salad

1 tin or equivalent of butter beans
1 tsp chopped dill
1 tbs chopped parsley
1 tbs lemon juice
1-2 tbs olive oil

Mix together and serve with a 1 inch thick strip of fresh smoked salmon as seen below and the zucchini flowers on the side.

This was a seriously great meal. We decided we could have done with less zucchini flowers though. They were really filling.

    Wow! I have always wanted to try zucchini flowers. And that is the hugest piece of smoked salmon I have ever seen in my life. What an awesome meal. I bet you crashed out on the couch after eating that.

      Hehe… it wasn’t that big. Probably the size of a piece of salmon that you’d buy to cook to eat. It has a completely different taste to the stuff you buy in the packets at the supermarket. Really really heavenly flavour. Sash is going to pick up a gallon drum on the weekend and we’re going to build our own smoker. That will open up a whole new world of smoked goods to experiment with. I can’t wait. Zucchini flowers are such a pleasure to work with. I have stuffed them with crab mixture before too. The produce at Eveleigh Markets at the Carriageworks is sublime. If you ever find any Gympie butter anywhere buy it and buy lots. It’s truely the most divine butter in the universe. So wonderful you can eat it like cheese. 🙂
