Brazillian chicken soup


This soup is great if you’re not feeling well because it’s salty, it’s liquid and it has rice in it.

1 chicken breast, diced
2 chopped carrots
1/2 yellow onion finely diced
1 bacon rasher chopped
2 cloves garlic
1 litre of chicken stock
1/2 cup rice
2 tbs parsley

Boil chicken, onion and garlic in stock for 25 minutes. Remove chicken pieces and put on plate. Strain the soup and discard solids. Put bacon in pot and sautée but don’t crisp then put stock back in pot, add veges and rice and simmer for 45 minutes. Replace chicken and simmer for 5 minutes then serve with parsley.

    This is a great soup called ‘ canja ‘ in Brazil. I usually squeeze a little lime juice into it just before serving and use cilantro instead of parlsey. Delish,
