Leatherjacket is a white fish with a prolific bone structure and a full bodied, meaty flavour. It is for this flavour that it is worth persevering with the bones.
Sasha makes a lovely simple dish by frying leatherjacket in butter, capers and chopped parsley with a drizzle of lemon juice served with dutch carrots, new potatoes (or chats as I call them) and beans.
