Sometimes comfort food is stodgy winter fare involving bread, pasta and lots of crispy roast vegetables. Sometimes comfort food is chicken and vegetable noodle soup when you’re sick and can’t digest anything that doesn’t involve a large amount of liquid. This post, however, is about the kind of comfort food you need when you’ve been at a big festival for 5 days, eating not so fresh food and are feeling a tad run down and in need of some healthy goodness.
Crispy skinned ocean trout, garlic wild rice, mango salsa and salad.
Mango salsa
1 mango diced
1/2 spanish onion finely diced
1 small handful of parsley
Mix well and leave stand for about an hour while rice is cooking
Wild rice
Simmer i small packet of wild rice in 450ml water for 45 minutes, drain, stir in 2 cloves of crushed garlic and serve.
Salad
Lettuce
Rocket
Marinated goats feta
2 tomatoes
2 slices of spanish onion rings
Herb oil of your choice
Arrange on plate
Ocean trout
Drizzle with lemon juice and grill for approximately 3 minutes each side depending on the thickness of the fish. I like to leave it skin side up for longer so the skin goes a bit crispy.
This was exactly what we needed. And some more sleep. 🙂

Yes, I do all of my own photography. Sometimes I have to be super quick because I get way to hungry to faff around happy snapping. Ultimately I’d like to include some produce and step by step stuff but I haven’t had much time of late.
